To create these profiles, we took inspiration from naturally occurring glacial and spring sources.

Our Key Ingredient
Also known as calcium carbonate, limestone is our key ingredient, a source of calcium with no unwanted impurities.
To dissolve limestone, we carbonate, agitate and decarbonate our mineral water mixtures, emulating nature's own process.
The result? Outlier levels of sweetness, clarity and aromatics without the usual harshness in your brew.

When you brew coffee, much of what you taste comes from the interaction between minerals and coffee grounds.
With the right amount of each mineral, a good brew of coffee becomes much more likely.

Brings out sweetness and primary flavor notes.
Magnesium
Contributes bright acidity and savory undertones.
Sodium
Increases sweetness and warmth in the flavor profile.
Chloride
Cleans up off-notes, minimizing roast defects and muting funk.
Sulfate
Increases flavor definition, bringing those bag notes into clear view.
Bicarbonate
Attenuates acidity. Adjust to your desired level with the provided buffer concentrate.
Carbonate
Once dissolved in water, carbonate converts to bicarbonate.
Potassium
A touch of potassium adds a refreshing quality to the water.
Silica
Typically found in artesian water sources, silica adds mouthfeel and sweetness.
Note: If you don't find it in fine natural mineral water, you won't find it in empirical water.

Do the water profiles resemble the natural sources they are named after?
Yes, we took direct inspiration from the world's finest naturally occurring glacial and spring water sources, then fine-tuned those profiles for exquisite coffee brewing performance.
All of our mineral profiles are diverse, containing the full spectrum of essential minerals in naturally occurring mineral water.
What makes nature-inspired water profiles so good for brewing coffee?
The difference is in the mineral composition, which consists of hardness, alkalinity, and other mineral ions.
Glacial and spring water sources come with suitable amounts of hardness and alkalinity, without the excess amounts of chloride and sulfate you normally encounter in other coffee water products and poor quality tap water.
To achieve our record-low levels of chloride and sulfate, we emulate the natural process for dissolving limestone, i.e. calcium carbonate—the #1 best-tasting source of mineral hardness—not found in any other coffee water product on the market.
Can I drink empirical water?
You may drink the brew water, and most people say it tastes slightly better than normal drinking water. That said, the water truly shines when used to brew coffee.
What's in the water?
empirical water consists of purified water and food-grade minerals which occur naturally in glacial and spring mineral waters, in comparable amounts.
Ingredients: Deionized water, sodium bicarbonate, calcium carbonate, magnesium sulfate, magnesium chloride, calcium chloride, potassium bicarbonate.
How will I dilute the concentrates?
Dilute the concentrates just like any other coffee water product: Using distilled water, available at most grocery stores.
You may also use reverse osmosis, or deionized water, which you can produce from any other water using a Zero Water filter pitcher.
Will I need to descale?
Only once every one thousand boiler cycles.
