Inspired by natural mineral water from glaciers, our GLACIAL profile is harmonious and lively, emphasizing clarity and complexity in coffee & tea.

How did we do it?

We reverse-engineered glacial mineral water by painstakingly emulating the natural limestone dissolution process, for record-low levels of chloride and sulfate impurities in our water.

Simply dilute the provided mineral concentrates with zero TDS water, and you can easily mix world class brew water for any coffee or tea.

Comes in sturdy, reusable glass bottles. Crafted in small batches, one batch at a time. Supply is limited.

Your order contains:

Instructions

Prepare in a 1 liter bottle, or directly in your kettle.

  1. Add 50 mL (or 50 grams) GLACIAL Hardness.
  2. Add 0.5 mL (or 0.59 grams) GLACIAL Buffer.
  3. Optional: Add 0.5 mL (or 0.59 grams) Extraction Booster.
  4. Fill remaining capacity with 950 mL (or 950 grams) zero TDS water.

Alternatively, prepare in a 1 gallon container of your choosing:

  1. Add 190 mL (or 190 grams) GLACIAL Hardness.
  2. Add 1.9 mL (or 2.24 grams) GLACIAL Buffer.
  3. Optional: Add 1.9 mL (or 2.24 grams) Extraction Booster.
  4. Fill remaining capacity with zero TDS water.

For higher intensity and acidity, use less buffer. For lower intensity and acidity, use more buffer.

Silica

empirical water is the only coffee water on the market to incorporate silica, a mineral that occurs naturally in many of the world's finest mineral waters.

Silica boosts sweetness, mouthfeel, and aftertaste.

Some describe the silica sensation as experiencing the sensory characteristics of your brew in slow motion. Aromatics stick around in your nose, mouth and throat for minutes on end.

If selected, silica will be added to your Hardness concentrate.

Extraction Booster

The Extraction Booster is a dropper bottle of mineral concentrate, designed to increase flavor intensity and definition.

Overall, the water did enhance the flavor profile of the coffee I was brewing. I was having trouble highlighting the lavender notes, but switching to the glacier water helped in resolving!

Great water for tea

After struggling to find good water for tea, I eventually tried Arby's empirical water and I couldn't go back! This gives my tea a much clearer and better taste than any combination of filters or tap water I've tried, without the hassle of having to constantly buy large quantities of bottled water. The perfect water for coffee

Was thrilled to find my concentrates came with a hardener, buffer and extraction booster. After following Arby's advice to start with 0 TDS filtered RO water I was able to get vibrant, clean tasting cups from light and UL roasts that had eluded me with other remineralised waters. Because the solutions are divided in this manner you can easily produce the profile you want with soft, low buffer water and still get the most flavor. Very happy!

An extraordinary, exceptional, and essential water - there's no going back

I cannot praise this water enough - it's simply outstanding.

After testing it against a well-known coffee water solution I've been using for some time, Empirical Water, to my taste, was far and away the better product. And, to be clear, it wasn't even close. Within seconds, on the first sip, it was immediately clear that Empirical Water was the winner, and, indeed, entirely in a league of its own. There was simply no comparison. It was astounding.

I think it's incredibly impressive when a product has the potential to revolutionize the way people taste and experience such culturally and socially important beverages consumed by billions, and I feel Empirical Water has the potential to bring a bit more joy, enjoyment, and deliciousness to people's lives. The best cup of coffee you can get

Brewing with empirical water has produced some of the best cups I've made. I had a natural Pacamara that had been difficult to brew really well and switching to using Empirical Water, Glacial with silica, produced a noticeably creamier more full-bodied texture. More pleasant acidity. Bit more clarity. Longer pleasant aftertaste. This water makes all my brews better and even when a brew occasionally doesn't go well, it's still tasty and has wonderful texture thanks to this water. Definitely try it out, and splurge for the silica, it's worth!
