    empirical water SPRING is a comprehensive mineral profile for brewing any coffee or tea, inspired by spring water. empirical water is the only brew water on the market to make use of paradigm-shifting minerals like calcium carbonate and silica.

    What's in the box?

    Your order contains:

    • Hardness concentrate — Comes in 1 liter bottle(s).

    Instructions

    Prepare in a 1 liter bottle, or directly in your kettle.

    1. Add 100 mL (or 100 grams) Hardness.
    2. Add 2x 0.50 mL (or 1.18 grams) Buffer.
    3. Add 0.50 mL (or 0.590 grams) Extraction Booster (optional).
    4. Fill remaining capacity with zero TDS water (about 900 grams).

    Alternatively, prepare in a 1 gallon container of your choosing:

    1. Add 380 grams Hardness.
    2. Add 8x 0.50 mL Buffer.
    3. Add 8x 0.50 mL Extraction Booster (optional).
    4. Fill remaining capacity with zero TDS water.

    Coffee vs Tea

    The Coffee and Tea Editions are pending differentiation. The Edition selector will stay up in the meantime to indicate that this water is suitable for both coffee and tea.

    Buffer Guide

    As a starting point for 1 liter of brew water, use:

    • 2x 0.50 mL Buffer for light roast filter coffee and any tea.
    • 4x 0.50 mL Buffer for medium roast filter coffee.
    • 6x 0.50 mL Buffer for dark roast filter coffee and any roast as espresso.

    For higher intensity and acidity, use less buffer. For lower intensity and acidity, use more buffer.

    Silica

    empirical water is the only coffee water on the market to incorporate silica, a mineral that occurs naturally in many of the world's finest mineral waters.

    Silica boosts sweetness, mouthfeel, and aftertaste.

    Some describe the silica sensation as experiencing the sensory characteristics of your brew in slow motion. Aromatics stick around in your nose, mouth and throat for minutes on end.

    If selected, silica will be added to your Hardness concentrate.

    The Extraction Booster is a dropper bottle of mineral concentrate, designed to increase flavor intensity and definition.

    Amazing!

    I have been using TWW for some time now. I ordered a sample of the Empirical’s Spring mix and found myself rediscovering a coffee I had been drinking for week. The Spring mix drew out many subtle notes and it double the cups clarity. I was converted. Highly recommend at least trying this product and I am confident that you will not be disappointed.

    I will be buying a concentrate soon. I got the formula 1.5 with extraction boost and.... I forget what the other plus was but it is the one that works for me. Good stuff. Good guy. Good coffee. Try it out.

    A/B Cupping Results

    Just did an A/B cupping of a September coffee using my normal 40/20/20 and empirical and the differences are huge.
    40Mg/20Ca/20k
    - very upfront acidity
    -low body
    - I find more florals and herbal notes than sweetness with a clear delineation of flavor

    Empirical
    - huge difference in body/mouthfeel
    -very balanced with emphasis on sweetness
    - some florals on initial sip but then goes to more darker fruit characteristics turning it juicy which is different . I find slightly less delineation with more blended flavor presentation.

    They’re both really great and just highlights different attributes of the coffee so I can't say anything about “better” but definitely a viable option to consider .

    Very noticeable improvements

    Great flavor, and very noticeable improvements in terms of texture and length of aftertaste. My tea was noticeably more viscous and oily, which was great. I also noticed a bit less astringency. Arby is doing good work here.

    I'm kinda mad at how much better my tea was with Empirical Water.
    The soup was thicker in a great way. Pulled more from the tea.

    Fantastic water, unique composition, worth buying!

    Arby's water is unique in the use of CaCO3 and the formulation mechanism. It undeniably has an impact not found in other mineral compositions. The large sweet spot in the brew, the taste, the mouthfeel are all elevated. Astringency is also lowered which is very nice cause it allows me to push extraction without as harsh impacts from accidental astringency.

    This water keeps upgrading with Arby's efforts and I am excited to see where it goes! Currently you can tweak it yourself to taste through the use of varying amounts of booster, buffer, or hardness. Lovely kit, came with everything you need and would recommend giving a shot!
