Our Key Ingredient

Also known as calcium carbonate, limestone is our key ingredient, a source of calcium with no unwanted impurities.

To dissolve limestone, we carbonate, agitate and decarbonate our mineral water mixtures, emulating nature's own process.

The result? Outlier levels of sweetness, clarity and aromatics without the usual harshness in your brew.

Best Coffee Water I’ve found

This has become my go-to. I’ve previously tried filtered water, third wave water, and making my own at home. The only one that tasted as good was making my own, but that was a pain dealing with the mineral concentrate and everything. It’s nice how easily empirical dissolves. For me, it’s worth it.

after trying literally everything else...

i use glacier w/o silica and w/o buffer, and sometimes aviary for a change. it may be counterintuitive, but the fact that it's already in a solution allows me to prepare whatever amount I desire, in whatever concentration to be further diluted later, without messing around with weighting tiny amounts of powders and wondering if the minerals are evenly distributed.

Empirical is the best and also the most convenient to use!!!

It changed the way I dial in a coffee

I love all of the profiles! The spring profile works wonders with filter coffee and everything—from naturally processed to washed—across all roast levels. It produces a very sweet cup with a decent amount of body, and the acidity is adjustable due to the droplets. The glacial profile works great across the board. I have a Flair 58, so with the glacial profile it’s nearly impossible to get a bad shot, even if I grind too fine, because of the water’s forgiving nature. I opted for the version with added silica, which, in my assessment, enhances the mouthfeel by making the water more “moist,” for lack of a better term.

Best of all is the support and constant kindness from Arby. Whenever I’ve had a question, he’s always there to answer and help out. I’ll definitely order more, as it offers something for my coffee experience I’ve never had before which is assistance with dialing in my coffee with water.

Very easy to use. I would say so far the Glacial produces a cup similar to 42g (one packet dissolved in 100g of dem water into 5 L) of light TWW. Have not cupped side by side, but will soon.

Love the thing. Tried everything before (apax, perfect water, tww, lotus etc) but Empirical water really hits the spot for me I use spring for Ultralights (substance,minmax, Tpc) and glacial for daily nordic lights works perfect everytime

Best water for coffee I have tried

I have been making up water for coffee for many years. I started out mixing up my own minerals, then switched to a couple of different commercial brands, and have stuck with one that I have used for the last two years. I recently tried Empirical Water, and we put it to a taste test. We tried two Empirical Waters (glacial v1.5 and spring v1.1) and my regular coffee water. We made two different coffees with all three waters, and there was five of us tasting with a wide range of coffee proficiency. Everyone preferred the Empirical Water with both coffees, with a split between glacial and spring. If you take your coffee seriously and you haven't tried Empirical Water, do yourself a favor and give it a try—and do a taste test.
