By now, the coffee community is well familiar with the importance of a water's mineral profile for brewing specialty coffee. But what about the quality of the water itself?

Most people dilute their coffee minerals and concentrates with distilled water, which gets stripped of its natural gases through the distillation process. This measurably affects pH, and deadens the mouthfeel, aftertaste, and flavor delivery.

Distilled water is not designed for deliciousness. This is why you often encounter metallic/plastic off-flavors in typical factory-produced distilled water.

Meanwhile, some coffee aficionados resort to reverse osmosis, not realizing that it still contains enough mineral content to compromise your target mineral profile, usually resulting in dulled flavor.
